A bit of a twist on traditional flapjacks with the addition of sweet figs, but this recipe is still extremely straightforward!

Cooking time: 30-40 mins + 8 hours left in the pan!

Ingredients:
375g butter
225g golden syrup (1/2 a tin of Lyle's in the UK)
250g dark brown soft sugar
500g porridge oats
300g figs, chopped into chunks, and to remove stalks

Directions:

1. Preheat the oven to 160 C and line two 9x9 pans (or one large pan) with baking paper.

2. On a low heat melt the butter, sugar and syrup in a large pan until completely melted and mixed.

3. Add the oats and chopped figs. Stir well as the oats need to be completely covered in the syrupy mixture. I only managed to fit about 450g in before feeling that was enough (although I didn't quite have enough butter in the house so that could be why).

4. Pour the mixture into the prepared pans and level out with a spatula. Bake in the oven for 30-40 mins. They will still look undercooked when you take them out but don't panic! Leave the flapjacks in the pans overnight (or 8 hours during the day) until completely cold. They are then ready to take out of the pan and eat.

5. Cut into triangles (of course!) and enjoy!
